{spinach artichoke dip}

Last Sunday we had family over for dinner.

I made pork chops on the grill

Cheesy potatoes...

And the pièce de résistance... spinach artichoke dip.

Start out with a can of artichokes, and chop them up.

Juice a lemon and chop some garlic.

Add some mayo, sour cream, and cream cheese. No dieters allowed.

Dump in some parmesan, chopped spinach, and black pepper.

Mix it all up and spread into a baking dish and top with shredded mozzarella.

When I took it out of the oven I topped it with sliced green onion. Then I ate about half the dish with tortilla chips. It's delicious! Tastes like restaurant style spinach artichoke dip....even better actually! Here's the recipe:

Spinach Artichoke Dip
  • 1 can artichokes (marinated or plain) drained and chopped
  • 1 box frozen chopped spinach, thawed and squeezed dry
  • 1/4 medium onion, minced
  • 4 cloves fresh garlic, minced
  • 3 T lemon juice
  • 8 oz softened cream cheese
  • 1 1/2 cups mayonnaise
  • 3/4 cup sour cream
  • 1/2 cup parmesan cheese
  • black pepper to taste
  • 2 cups shredded mozzarella
Combine all ingredients except for mozzarella. Spread into greased baking dish and top with cheese. Bake at 350, uncovered for 40 minutes. Broil to brown top. Serve with tortilla chips or slices of baguette.
